From November the 16th Dugan’s will offer a selection of fine wines and beers from around the world. Our wines and beers are carefully selected to pair with our menu and our staff will advise you of the best combinations available.
Wine and food matching is the process of pairing food dishes with wine or beer to enhance the dining experience. Wine and beer both have a long history of being a staple at the dinner table and in some ways both the wine and beer making and culinary traditions of a region will have evolved together over the years. Usually food and drink paitings originated because local cuisines were paired simply with local wines or beers. For example the Trappist monks who matched their own brewed beer with the cheese they made. The modern way of food pairings is a relatively recent phenomenon, fostering an industry of books and media with guidelines for pairings of particular foods with wine and most recently, primarely in the United States, with beer.
At Dugans we’re starting with a selection of whites including a delicious fizzy Txakolina (Basque) wine, a lovely Prosecco and a Glennois (similar to Sancerre) to match our salads and salmon dishes while we offer a selection of reds perfect with our spicier dishes such as our Chilli and Pork Belly and Bean Stew.
